抗氧化剂:天然品,无毒,具有解毒保肝作用。LD₅₀值为805mg/kg(小鼠,腹腔内注射)。
使用限量根据GB 2760--1996标准,甘草酸一钾、三钾的使用限量与“02317,甘草”相同。
化学性质由两个分子的葡萄糖醛酸组成的甘草酸-ff苷。白色结晶性粉末,甜度约为蔗糖的200倍。其甜味不同于蔗糖等甜味剂,需略过片刻才出现,但留存时间较长。少量甘草苷与蔗糖并用可减少20%蔗糖而保持同等甜度。虽无香气,但它具有增香效能。熔点(分解)为220℃。水溶液呈弱酸性。
用途在我国民间,甘草苷广泛用于酱及酱制品、腌渍品中。
用途由豆科植物甘草(Glycyrrhiza uralensis fisch)的根茎中提取甘草酸,制成铵盐后再水解而得。甘草为多年生草本,主产于内蒙古和甘肃等地,其根及根茎主要含甘草甜素,即甘草酸钾、钙盐,是甘草的主要甜味成分。
将粉碎后的甘草加水加热提取,连续逆流提取并分离除去草渣杂质后得水溶液。蒸发浓缩,在搅拌下加入硫酸(pH 2-3),静置沉淀。除去上清液,沉淀物用水洗尽硫酸根,再加热浓缩熬制成甘草酸膏。粉碎后的甘草酸膏用95%乙醇提取两次,每次3小时,得乙醇溶液。经过滤后在搅拌下通氨至pH 7-7.5,过滤得到甘草酸三铵盐粗品,通过冰醋酸精制为米黄色的甘草酸单铵盐。
将甘草酸单铵盐加入5%硫酸水溶液中,搅拌加热近沸,回流水解15小时。过滤、水洗得甘草次酸粗品,并经过重结晶、脱色即得到含量在92%以上的基草次酸。以甘草计,总收率约为0.5%。
另一种生产方法由甘草抽提液(见“02317 甘草”)经浓缩干燥后制得粗结晶,然后在稀酒精中重结晶而得,得率为6%-14%。也可直接用氨水萃取,经浓缩后再用硫酸沉淀,并用95%乙醇重结晶而得到。
