粪臭素是一种白色鳞片或粉末状结晶(由石油醚中提取),暴露于空气中时会逐渐变深色;带有强烈的、类似动物的粪便香味。它的气味非常强烈,扩散力强且持久。高浓度时令人作呕,但在极低浓度下则能散发出类似于大灵猫香的气息。其味道具有温暖过熟水果的味道。熔点为96℃(范围在93~96℃),沸点265~266℃,能够溶于热水和乙醇以及其他一般的有机溶剂中。
用途粪臭素拥有很好的定香作用,通常作为定香剂使用。它只能用痕量才能在花香型香精中赋予大灵猫般的香气,给人带来一种过熟的花香感受。常被用来配制大灵猫香。在配方设计中,它常常与苯乙酸、灵猫酮或巨环酮等物质一同使用以获得更好的天然动物香味效果,尤其是与檀香香气相结合时效果更佳。
食品添加剂最大允许使用量及残留标准粪臭素作为食品添加剂主要用于配制香精。根据GB 2760规定,在用于各种食品中时,其各组成香料成分的最大允许使用量和残留量不得超过该标准中的限定值。
化学性质粪臭素是白色结晶状物质。沸点为265~266℃,熔点为93~96℃。它能够溶解于3体积的95%乙醇及油质香料中。具有带咸臭的吲哚样动物香气,气味强烈、扩散力强且持久。高浓度时会令人作呕,在极低浓度下则能散发出类似于大灵猫香的气息,味道温暖且带有过熟水果的风味。

用途粪臭素可用作有机合成试剂,并作为生化试剂,对胰蛋白酶活性具有抑制作用。大量稀释后具有花香味,被广泛用于香烟、香水中的香精以及定香剂和食物香料等。
用途它还是一种医药中间体,可作为定香剂使用。
生产方法3-甲基吲哚存在于灵猫香、人类粪便、干酪、牛奶及茶中。工业生产可通过将丙醛与苯肼加热反应脱去水分子生成丙醛苯腙,再经氯化锌或硫酸加热处理,脱除氨分子而得到3-甲基吲哚。
