食品添加剂是指用于改善食品感观性状(色、香、味)和提高食品质量的一种天然或人工合成化学物质。在成人食品中可根据我国卫生标准添加适量的食品添加剂,但婴幼儿食品中应严格控制使用,避免过量的化学物质造成婴幼儿体内解毒机制与保护机制负担加重。世界卫生组织及各国均规定,在婴幼儿食品中不得添加食品添加剂,并尽量限制儿童食品中的糖精、色素和香精等成分。尤其在不足12周龄的婴儿食品如配方食品和谷类制品中应完全不含食品添加剂。
食品添加剂可分为天然与化学合成两大类。天然食品添加剂通常以动植物或微生物代谢产物为原料,通过提取获得;而化学合成食品添加剂则是以化学物质作为原料进行合成制得。根据使用目的及化学性质的不同,食品添加剂还可分为以下几类:酸、碱、盐,疏松剂,抗氧化剂与增效剂,载体溶剂,食用色素,乳化剂、稳定剂、增稠剂,食品加工用酶制剂,消泡剂,食用香料,漂白剂,发色剂,品质改良剂,甜味剂,防腐剂,酸味剂,抗结剂,凝固剂及其他等。
食品添加剂并非基本的食品成分。它们在烘焙食品中的作用包括:①延长食品保存期,防止腐败变质;例如植物油、人造奶油、饼干、面包、蛋糕和月饼等若处理不当会迅速腐败变质,防腐剂、防霉剂与抗氧化剂能有效延缓微生物及氧化引起的食品变质。②提升感官质量;通过使用乳化剂、增稠剂、食用色素、香料、甜味剂、酸味剂、鲜味剂和品质改良剂等,能够显著提高食品的色香味形,满足人们的多样化需求。③保持或提高食品营养价值;在食品加工过程中适当添加营养强化剂可以增加食品价值,防止营养损失,同时防腐剂与抗氧化剂的应用有助于维持食品营养价值。④拓展食品种类及便捷性;多种食品因防腐、抗氧、乳化和增稠等作用而多样化,方便人们选择并提高生活质量。⑤利于食品加工操作的机械化与自动化;例如面粉处理剂、增稠稳定剂和乳化剂的应用可简化生产流程。⑥满足不同需求;如糖尿病患者可通过无糖或低热能甜味剂来制作无糖食品。
虽然食品添加剂有诸多益处,但某些品种本身也具有一定毒性。尤其是近年来人们担心长期摄入可能带来的潜在危害,特别是食用合成色素的致癌与致畸作用引起了广泛关注。亚硝酸钠作为肉类制品护色和防腐的重要成分虽有显著效果,但仍存在较大毒性并可生成亚硝胺导致致癌风险。然而目前尚无理想替代品,并未发现因低剂量使用而引发癌症的证据。因此在严格控制用量、残留量及配合抗坏血酸等措施下,依然允许其使用。
确保食品添加剂的安全性与有效性至关重要。安全性评价包括工艺、理化性质、质量标准、使用效果、范围、加入量和毒理学评估等多个方面。各国通常通过法规如食品添加剂使用卫生标准来确定许可使用的食品添加剂种类及其应用范围、最大使用量或残留量。绝大多数食品添加剂已通过严格的毒理学试验与安全性评价,最大程度地降低了潜在危害。只要遵守《食品添加剂使用卫生标准》(GB 2460—1996)的相关规定并正确使用,就能确保其安全同时充分发挥有益作用。
