性状

山梨酸钠为白色结晶或结晶性粉末，易溶于水。

用途

作为防腐剂和抗氧化剂，山梨酸钠具有较高的抗菌性能，对细菌、霉菌、酵母菌均有抑制作用，尤其在防霉方面效果良好。它被广泛应用于食品、饮料、化妆品及医药领域，因其安全性好、防腐性能高效而受到青睐，并且副作用比苯甲酸少，因此常用来替代有毒的添加剂如苯甲酸钠。

然而，尽管山梨酸（包括山梨酸钠和山梨酸钾）作为防腐剂在国内外大量使用中未发现对人体不利或中毒现象，但在动物实验中显示某些防腐剂可能具有致癌性。例如，用作罐头食品防腐剂的山梨酸与纤维肉瘤的形成可能存在关联。
