制备方法与用途

L-抗坏血酸棕榈酸酯是一种常用的抗氧化剂和食品营养强化剂。以下是关于它的详细介绍:

化学性质
  1. 外观:白色或黄白色粉末。
  2. 气味:略有柑橘气味。
  3. 溶解性
    • 极易溶于和植物油。
    • 易溶于乙醇(1g/4.5ml)。
  4. 熔点:107~117℃。
用途
  1. 抗氧化剂:用于含油脂食品、方便面、食用油脂和氢化植物油,最大使用量为0.2g/kg;也可用于婴儿配方食品(以脂肪中抗坏血酸计),最大使用量为0.01g/kg。
  2. 营养强化剂:广泛应用于食品饮料等领域。
生产方法
  1. 第一种方法

    • 将64克棕榈酸置于加热滴液漏斗,使其处于熔融状态;
    • 200毫升二亚砜装入烧瓶中,加热使其蒸汽通过导管进入瓷环填料的反应柱与棕榈酸反应;
    • 反应30分钟后,常压蒸馏除去少量二亚砜,减压蒸馏收集150~152℃(2~3kPa)无色透明液体58.6g。
  2. 第二种方法

    • 在烧瓶中加入26.5毫升二甲基甲酰胺,通入HCl气体2克;
    • 加入9.69克结晶抗坏血酸和13.3毫升二氯甲烷使反应液澄清;
    • 慢慢滴加15.2毫升棕榈酰氯,反应18小时后升温至20℃反应30分钟。
    • 将反应物加入到乙酸乙酯中搅拌洗涤2小时,抽滤并用(50ml×3)洗涤3次,在50℃下真空干燥18小时,得白色粉末17.5g。
应用领域

L-抗坏血酸棕榈酸酯广泛应用于食品、医药等领域。作为营养强化剂和抗氧化保鲜剂,它对保持食品安全和营养价值具有重要作用。
