4-甲基-5-(β-羟乙基)噻唑可通过还原反应得到。具体方法为:以4-甲基-5-醋酸乙酯为原料,使用四氢锂铝进行还原;或先用α-氯代乙酰丙醇与硫代甲酰胺缩合环化,再经双氧水作用得到目标产物。
应用根据GB 2760-96规定,4-甲基-5-(β-羟乙基)噻唑作为食品用香料暂时允许使用。可用于饮料、糖果、烘烤食品、冰淇淋、奶制品、海鲜味、鸡肉味、肉汁、汤料、牛肉乳制品及谷制品等。
含量分析采用气相色谱法(GT-10-4)中非极性柱方法测定其含量。
毒性GRAS(FEMA)级别。
使用限量根据FEMA规定,软饮料、冷饮、糖果、烘焙食品、布丁、胶姆糖、调味料、肉制品、肉羹汤、乳及乳制品、谷类制品中的最大允许使用量为55.0 mg/kg。
食品添加剂最大允许使用量和最大允许残留量标准4-甲基-5-(β-羟乙基)噻唑为无色至淡黄色粘稠油状液体,久置后颜色可能变暗。具有不愉快的噻吩类化合物气味,高度稀释时则呈现坚果香气。沸点分别为103℃(133 Pa)或135℃(933 Pa)。极易溶于水,也能溶解于乙醇、乙醚、苯和氯仿中。
用途GB 2760-96将其规定为暂时允许使用的食品用香料。主要用于坚果类、奶制品、肉制品等,并可用作医药中间体。此外,也可用于巧克力、牛奶及坚果香精的调配。
