制备方法与用途

概述

蔗糖是食糖的主要成分,属于一种双糖,由一分子葡萄糖与一分子果糖缩合脱水而成。在甘蔗、甜菜及槭树汁中含量丰富。蔗糖味道甜美,是重要的食品和甜味调味品。

生理作用

α-乳糖水合物在胃中不易被消化,可直接到达肠道,在空回肠内易被乳糖酶分解为葡萄糖和半乳糖。葡萄糖主要提供能量,而半乳糖促进脑苷和黏多糖类的生成,参与大脑发育,对婴儿智力发育尤为重要。此外,α-乳糖水合物还能促进某些乳酸菌的生长,抑制腐败菌的繁殖。

制法

蔗糖的主要原料是甘蔗(Saccharum spp.)和甜菜(Beta vulgaris)。将甘蔗或甜菜压碎提取糖汁,过滤后用石灰处理以去除杂质并漂白;随后煮沸糖汁,除去底部沉淀物和表面泡沫,待其冷却结晶成为蔗糖。

用途

蔗糖用于分析试剂、色谱分析及生物培养基的制备。此外,它还用作色谱吸附剂和细菌培养基。α-乳糖在常温水溶液中结晶形成α-乳糖,在93℃以上则变成β-乳糖。α-乳糖呈单斜晶体结构,具有微弱甜味,通常带有结晶水;120℃时失去结晶水,并且其水溶液在加热过程中会发生变旋现象。β-乳糖比α-乳糖稍甜,熔点为252℃,同样具有变旋性质。
