棉子糖为白色结晶粉末,从水溶液结晶时带有五分子结晶水。密度1.465,熔点80℃。缓缓加热至100℃时失去结晶水。它由棉子饼磨粉水解或甜菜糖蜜制得,是一种三糖,由右旋半乳糖、右旋葡萄糖和左旋果糖各一分子组成。无水物的熔点为118~119℃。棉子糖易溶于水,极微溶于乙醇,并具有右旋光性。主要用于医药和微生物培养基等领域。

生理功效

棉子糖是一种功能性低聚糖,不被人体肠胃消化液所吸收分解,能直接进入大肠肠道被微生物发酵利用,类似于膳食纤维。其能量值为6kJ/g。棉子糖是人体肠道中双歧杆菌、嗜酸乳酸杆菌等有益菌的极好营养源和有效的增殖因子,有助于整肠和改善排便功能,促进钙吸收,并增强人体免疫力,预防疾病,抗衰老。此外,它还可作为活器官移植用保护输送液的主要成分及延长活菌体在常温下存活期的增效剂。
