充分开发利用微生物油脂,拓宽其应用范围,将显著提高其经济价值,并降低生产成本。目前,在产油酵母发酵生产过程中,绝大多数微生物积累的脂肪酸以油酸、棕榈酸和硬脂酸为主,还能少量积累亚油酸、肉豆蔻酸、亚麻酸、二十碳酸、二十二碳酸和二十四碳酸以及11碳酸三甘油酯等。虽然利用产油酵母生产这类脂肪酸用途广泛,但限制了其进一步开发的潜力。

因此,拓宽产油酵母油脂产物的种类,提高微生物油脂的经济价值具有重要意义。
