Abstract The alkalinedegradation of a mixture of mono-O-methylsucroses has been studied. Some of the components of the mixture are degraded relatively rapidly at a similar to that of sucrose, but 1′- and 3′- O-methylsucrose are degraded much slowly. It is suggested that the alkalinedegradation of sucrose occurs via two initial, and competing, rate-determining steps, each involving S N icB mechanisms
