13种商业焦糖在带有或不带有S-9混合物的伤寒沙门氏菌(TA100,TA98)菌株中进行了致突变性测试,并在野生型POL A-和野生型REC A-的大肠杆菌中测试了DNA损伤效果。没有发现对伤寒沙门氏菌和大肠杆菌有遗传活性的化合物。
