3-N-(L-Aspartyl)amino-1-fenchyl-2-butanol or 3-N-(L-aspartyl)amino-4-fenchyl-2-butanol are of the formula:
wherein R₁ is a methyl group and R₂ is a homofenchyl group, or R₁ is homofenchyl and R₂ is methyl.
Synthesis is by converting 1-fenchone to fenchylaldehyde, which is converted by one of two routes to one of the two isomers of fenchylamino alcohol, and the isomer is reacted with monobenzyl-L-aspartate having a protective group (e.g. carbonbenzoxy), and the protective group is then removed.
The compounds have excellent sweetness characteristics and are useful as a sweetener which has good stability in acidic aqueous solutions.
