化学性质

山梨酸钾为白色至浅黄色鳞片状结晶、结晶性粉末或呈粒状,无臭或微臭。长期存放于空气中易吸潮并氧化分解而着色。相对密度(d2025)1.363。熔点270℃(分解)。易溶于(67.6g/100ml,20℃)、5%食盐(47.5g/100ml,室温)和25%砂糖(5lg/100ml,室温),还溶于丙二醇(5.8g/100mL)、乙醇(0.3g/100mL)。1%溶液的pH值为7~8。山梨酸钾有很强的抑制腐败菌和霉菌作用,并因毒性远比其他防腐剂低,已成为世界上最主要的防腐剂之一。在酸性条件下能充分发挥防腐作用,在中性时效果甚微。

用途

在食品工业中作为防腐剂、防霉剂使用。

生产方法
