Stable cationic carotenoid aggregates - predominantly of the J-type - develop when the hydrochlorides of carotenoid aldoximes and ketoximes are exposed to water. The oxime hydrochlorides are obtained by simple syntheses from commercially available food color carotenoids. Bluish-purple, unstable transient compounds were observed during hydrochlorination performed at liquid nitrogen temperature. (C) 2009 Elsevier Ireland Ltd. All rights reserved.

Astaxanthin (1; 3,3′-dihydroxy-β,β-carotene-4,4′-dione) isolated from lobster eggs (Homarusgammarus) was unexpectedly found to be a mixture of all three optical isomers as determined by HPLC. analysis of the corresponding diesters of (–)-camphanic acid. This is the first finding of meso-astaxanthin and a meso-carotenoid in general in nature.

Die Erfindung betrifft ein Verfahren zur stereounselektiven sowie zur stereoselektiven Synthese von Astaxanthin aus Astacin. Hierzu setzt man ein Reduktionsmittel ein, das ausgewählt ist aus der Gruppe Wasserstoffgas, einem sekundären Alkohol, Ameisensäure sowie den Salzen der Ameisensäure oder aus einem Gemisch wenigstens zweier Vertreter der vorab angegebenen Verbindungsklassen. Ein weiterer Gegenstand der Erfindung ist die Verwendung von Astacin als Ausgangsverbindung für die Synthese von Astaxanthin.

The invention relates to a method for preparing a cyclic α-ketoalcohol, particularly a 6-hydroxycyclohexenone from a cyclic α-ketoenol, particularly a 6-hydroxycyclohexadienone, using a reducing agent. This reducing agent is selected from hydrogen gas; a secondary alcohol, formic acid and the salts of formic acid or a mixture of at least two representatives of these compound classes. The invention further comprises the use of an α-ketoenol, in particular a 6-hydroxycyclohexadienone, as intermediate for preparing astaxanthin.
The invention relates to a method for the non-stereoselective and also for the stereoselective synthesis of astaxanthin from astacin. For this purpose, a reducing agent is used selected from the group of hydrogen, a secondary alcohol, formic acid and also the salts of formic acid or from a mixture of at least two representatives of the compound classes stated above. The invention further relates to the use of astacin as starting compound for the synthesis of astaxanthin.
