N-Acetylneuraminate pyruvate lyase accepts as substrates varied non-nitrogeneous sugars. Condensation of pyruvate with D-mannose yields 3-deoxy-D-glycero-D-galacto-2-nonulosonic acid (KDN) a component of rainbow trout egg polysialoglycoprotein.
