    The present invention provides a bioactive extract obtained from the Vicia faba pod having pro-dopaminergic, anti-inflammatory, antioxidant and neuroprotective activity, thereby improving the survival of dopaminergic neurons. Therefore, this bioproduct is proposed in the treatment and/or prevention of neurological disorders associated with a reduction in dopamine levels, such as Parkinson's Disease and other Parkinsonian syndromes of varying nature. The invention also relates to a process for obtaining said bioproduct and a pharmaceutical composition that comprises it.

    A method of processing a fava bean composition is disclosed, the method comprising the steps of: i. providing a fava bean composition comprising fava beans, and ii. subjecting the fava bean composition to a betaglucosidase and/or at least one lactobacillus plantarum bacteria under dosage, time and temperature conditions selected so as to be sufficient to reduce the content of at least one of the compounds vicine and convicine, and preferably also at least one of the compounds divicine and isouramil, by at least 90 wt% as compared to the content of said compounds in the fava bean composition provided in step i. A fava bean composition obtained by the method as well as methods of producing food compositions using the fava bean composition and food compositions thus produced are also disclosed.

    A process for the manufacture of a product from a plant material comprising the steps of providing a disrupted plant material comprising <10% (w/w) starch and <10% (w/w) oil/lipids; adjusting the pH of the disrupted plant material to a value of pH 3.5 or below to provide an acidic suspension; heating the acidic suspension to a temperature in the range of about 50° C. to about 80° C.; isolating the product from the heated, acidic suspension. The product may be a protein product or a non-protein product. In particular, the process of the invention provides a protein product with reduced contents of non-protein components of negative nutritional value.

    The extract of Vicia faba beans is prepared by soaking beans in distilled water overnight and then boiling in a water bath to reduce the volume of aqueous extract, which is then homogenized and filtered. The filtrate is concentrated to a smaller volume, lyophilized, and powdered. The lyophilized powder is extracted with hexane to remove oils and lipids. The oil-free lyophilized powder is dissolved in ethanol solvent and extracted for eight hours under reflux, and filtered. The volume of ethanol is reduced by a rotary evaporator, and a first off-white precipitate (sample A-1) is collected, washed with ethanol, and dried at 80° C. Mass spectrometry shows a molecular weight of 200.16447 g mol−1, and an empirical formula of C9H16N2O3 is assigned. Intraperitoneal injection of mice with 50 mg/kg of A-1 twenty minutes prior to injection with strychnine protected the mice from strychnine-induced convulsions to the same extent as phenobarbitone (phenobarbital).
