  The invention provides a method of preparing β-erythritol fatty acid monoester, including: subjecting a fatty acid and erythritol to esterification reaction in the presence of an acid catalyst, a water carrier and an optional phase transfer catalyst, wherein the molar ratio of the fatty acid to erythritol is 1:2 to 1:3, and the temperature of the esterification reaction is 80-100° C.
