N-甲基-N-甲酰肼(MFH)是通过水解食用蘑菇鹿花菌(Gyromitra_esculenta)的主要毒素鹿花菌素形成的。细胞色素P-450介导MFH氧化成羟基胺衍生物,进而形成亚硝酰胺。这种亚硝酰胺的形成可能是甲基甲酰肼已知肝致癌性的原因。

CYTOCHROME P-450 MEDIATES THE OXIDN OF MFH TO HYDROXYLAMINE DERIV & FURTHER TO NITROSAMIDE. THIS NITROSAMIDE FORMATION MAY BE THE REASON FOR THE KNOWN HEPATOCARCINOGENICITY OF METHYLFORMYLHYDRAZINE.
