制备方法与用途

性质

本品为白色或淡黄色结晶性粉末，无臭且略有特殊味道。易溶于水，微溶于乙醇等有机物，熔点为190°C，耐光、耐热性良好。其溶液在120°C加热2小时仍保持稳定，水溶液呈中性或微碱性。采用瞬间喷雾干燥成粉，产品纯度高，质量稳定可靠，纯度可达98%以上，水分含量低于2.6%。

简介

脱氢醋酸钠是一种广谱高效食品防腐剂，尤其对霉菌、酵母菌的抑制能力极强。同等添加量下，其抑菌效果远优于苯甲酸钠和山梨酸钾等常用防腐剂，甚至高出数十倍。特别值得注意的是，它对产酸菌尤其是乳酸菌的抑制作用较小。按照国家相关标准及美国FCC推荐，适用于腐乳、什锦酱菜、泡菜、酸菜、原果汁、浓缩果汁、果酒、干酪、奶油、人造奶油、酸乳、乳酸饮料、碳酸饮料、豆沙酱、面包、月饼、糕点、甜面酱、罐头、调味品、保健品及化妆品等产品的防腐和防霉。尤其适用于需尽量抑制其他有害菌而较少抑制有益的乳酸菌的乳酸饮料、泡菜、酸菜、酱菜等产品。

用途

脱氢醋酸钠是一种安全性高、抗菌范围广且抗菌能力强的防腐保鲜剂。它在食品中的酸碱度影响较小，在酸性或微碱性条件下均能保持高效的抗菌效力，其抗菌能力优于苯甲酸钠、山梨酸钾及丙酸钙等常用防腐剂。

含量分析

精确称取约500mg试样，移入125ml锥形烧瓶中，加入冰醋酸25ml，再滴加1%对萘酚苯的冰醋酸溶液1滴。用0.1mol/L过氯酸滴定至蓝色，每毫升0.1mol/L过氯酸相当于脱氢醋酸钠(C8H7NaO4)19.01mg。

毒性

LD₅₀值为大鼠经口0.57g/kg、小鼠经口1175mg/kg。该物质可安全用于食品(FDA，§172．130，2000)。

使用限量

• FDA §172．130(2000)：切碎或剥皮柔鱼类，65mg/kg。
• FDA §180．159(2000)：最高残留量，香蕉30（mg/kg），去皮香蕉果肉10（mg/kg），草莓65（mg/kg）。

化学性质

脱氢醋酸钠为白色或近白色的结晶性粉末，无臭且略有特殊味道。熔点109～110℃。易溶于水(1g/3ml)、丙二醇(1g/2ml)及甘油(1g/7ml)，微溶于乙醇(1%)和丙酮(0.2%)。耐光、耐热性良好。其水溶液在120°C加热2小时仍保持稳定，呈中性或微碱性。

用途

主要用于食品添加剂、防腐剂及杀菌剂。

生产方法

通过氢氧化钠中和脱氢醋酸制得。
