Salicin is a substance that is well known for its bitter taste. Photoreactive benzophenone and phenylazide derivatives of salicin are for the functional analysis of interactions between the bitter taste receptor and salicin. First synthesis of these derivatives was prepared from acetobromo-alpha-D-glucose via glucosidation with salicylaldehyde derivatives followed by reduction of aldehyde to form salicin skeleton.
