Processes of making extracts of Hoodia plant containing steroidal glycosides which have improved flavor, by virtue of reduced levels of discovered negative flavor compounds, comprising:
a. dissolving initial Hoodia extracts in an oil, to obtain a solution of the extract;
b. heating the solution, under vacuum, to a temperature in the range of from about 80 to about 140°C;
c. removing negative flavor compounds by stripping the heated solution, under vacuum, with a gas stream, to obtain Hoodia extracts of improved flavor.
