Abstract Thirteen N -(1-deoxy- d -fructos-1-yl)- N -nitroso- l -amino acids were prepared, in 83–95% yield, by nitrosation of the corresponding “fructose-amino acids” with sodium nitrite in water-hydrochloric acid, at pH 3.
