简介

血红素铁,又称羟高铁血红素,为暗紫色光泽的细微针状结晶或黑褐色颗粒、粉末,略带特殊气味。它极不稳定,易氧化,不溶于水,并用作高效的铁强化剂。与一般铁剂相比,其吸收率约高3倍,含铁量在1.0%~2.5%之间。

用途

血红素铁是与血红蛋白及肌红蛋白中的卟啉结合的铁,以卟啉铁的形式直接被肠黏膜上皮细胞吸收。一般不受植酸根等抑制因素或维生素C等促进因素的影响。主要用于铁的营养强化剂、补血剂及食品添加剂。

此外,它还用于测定铜和生化研究。
