制备方法与用途

甜菜红色素概述

甜菜红色素是以食用红甜菜为原料,通过浸提、分离、浓缩、干燥等工艺制成的天然色素。主要成分为甜菜花青素,呈红紫至深紫色液体或粉末状,易溶于水,水溶液呈现红色至紫红色,色泽鲜艳。

甜菜红色素色泽鲜艳、着色均匀且无异味,具有良好的着色功能。它广泛应用于饮料、冰淇淋、部分酒类、糖果、糕点、肉制品等多种食品的着色。由于大多数食品的pH值在3.0~7.0之间,在此区间内甜菜红的颜色不会发生变化,因此用作食品着色剂时,食品的色泽不受pH值的影响。特别地,在生产低水分活性食品时,使用甜菜红色素能获得满意的效果并使色泽持久。

此外,研究表明在香肠中使用壳寡糖清除亚硝酸盐时,甜菜红色素具有很好的清除能力,因此可在减少壳聚糖用量的同时作为着色剂和亚硝酸盐清除剂的补充。

性质

甜菜红色素易溶于水及含水溶剂,为水溶性色素。不溶于醋酸、丙二醇等有机溶剂,且难溶于无水乙醇、甘油、丙酮、氯仿和油脂等。它呈紫红色液体或粉末状,色调受pH值影响:当pH值在3.0-7.0时为红色且较稳定;在4.0-5.0时最稳定;当pH<4.0或pH>7.0时颜色由红色变成紫色;而pH>10.0时,甜菜红色素中的甜菜色苷转化为甜菜黄质,溶液迅速变黄。因此,在酸性和中性条件下,甜菜红色素较为稳定。

大多数食品的pH值在3.0-7.0之间,故含有甜菜苷的食物颜色一般不受pH值的影响。

用途

甜菜红色素适用于冷饮、乳制品、水果制品及不需要加热的食品着色,但不适合用于饮料。它是一种红紫色的着色剂。

化学性质与用途

甜菜红色素为红色至紫红色膏状或粉末,无臭味。水溶液呈红色至紫红色,可溶于水而不溶于乙醇。在碱性溶液中变黄,pH值3~7时比较稳定;染着性好但耐热性较差;光和氧会促进其降解。在pH值5.0时的半衰期为1150min±100min(25℃) 和 14.5min±2min(100℃),最大吸收波长为537~538nm,ADI无特殊规定。

甜菜红色素作为食品着色剂可用于各类食品,并按生产需要适量使用。它是天然红紫色食用色素。

生产方法

甜菜根茎(俗称紫菜头)经2%亚硫酸氢钠液在95~98℃热烫10~15min灭酶后,用水萃取浓缩得深红色浆料或红色粉末,需除去天然存在的盐类、糖类及蛋白质。可添加食品级酸如柠檬酸、乳酸和L-抗坏血酸作为pH调节剂和稳定剂,麦芽糊精等作为载体和填充剂。

甜菜鲜根在80℃的水中加热10min后切成3~5mm丝状,在室温下水中浸泡40分钟后袋滤并压榨。第二次滤液用于第一次浸提。滤液减压浓缩至含干物质约40%后再喷雾或真空干燥,收率为60%,含甜菜苷0.45%~0.8%。
