  The present invention provides a process for preparing a modified protein composition in which the amino acid constitution of a protein raw material is modified by preparing a dispersion of a given concentration of the protein raw material having a protease dissolved therein, esterifying an amino acid in an alcohol in the presence of a sulfuric acid catalyst to form an amino acid ester reaction solution, and adding the amino acid ester reaction solution to the dispersion to cause the protease to act on the protein raw material to give rise to the reverse reaction of proteolysis, thereby incorporating the amino acid into the protein in the form of a peptide bond.
