Process for the preparation of sulphur- containing L-alpha-amino acids consisting of contacting a sulphur-containing L- or DL-alpha-amino acid amide with an aminopeptidase obtained from a culture of Pseudomonas putida or related microorganisms, such as Pseudomonas reptilivora or Pseudomonas arvilla, and isolating the resultant sulphur-containing L-alpha-amino acid, the enzymatic reaction being carried out in the presence of a hydroxylamine compound.
