An α-acetoxy ketone reducing enzyme has been purified and characterized from the cell-free extract of bakers’ yeast (Saccharomyces cerevisiae). Only one NADPH-dependent dehydrogenase that catalyzed the reduction of α-acetoxy ketone was found in bakers’ yeast.
