  The invention provides novel amino acid derivatives represented by formula (1) as well as their structural isomers and their hydrolysates In this formula    X and Y are each N or NH,    Z is O or OH, (1) when X=N and Y=NH, Z=0, and *1 and *3 are double bonds, (2) when X=NH and Y=N, Z=0, and *2 and *3 are double bonds, (3) when X=N and Y=N, Z=OH, and *2 and *4 are double bonds, and    R is a side chain derived from a naturally occuring amino acid. These amino acid derivatives are useful as a component of a seasoning material which gives foods a "thick sour taste" in the neutral pH region.
