A process for producing a saccharide fatty acid monoester comprises reacting an immobilized thermostable lipase on a mixture comprising:
(A) one or more of acyl donors selected from saturated and unsaturated fatty acids with 6 to 22 carbon atoms, lower alkyl esters of said fatty acids and glycerol esters of said fatty acids,
(B) one or more of saccharides selected from monosaccharides with 5 to 7 carbon atoms, disaccharides composed of hexose, sugar alcohols with 4 to 6 carbon atoms, ethers of monosaccharides with 5 to 7 carbon atoms and monohydric alcohols and ethers of disaccharides composed of hexose and monohydric alcohols, and
(C) one or more of alcohols selected from secondary alcohols and tertiary alcohols.

A polyol fatty acid monoester can be produced with an industrial advantage at high synthesis ratio upon (1) mixing and reacting a saturated or unsaturated fatty acid having 6 to 22 carbon atoms or an ester of such a fatty acid with a lower alcohol having 1 to 3 carbon atoms and a polyol selected from glycerol and its derivatives, polyglycerol and its derivatives, ethylene glycol, polyethylene glycol, propylene glycol and polypropylene glycol or (2) mixing and reacting a glyceride oil or fat comprising a saturated or unsaturated fatty acid having 6 to 22 carbon atoms as the constituent fatty acid and one or more of the above polyols, wherein an enzymatic reaction is conducted by using an immobilized thermostable lipase under the presence of a secondary or tertiary alcohol.

The present invention relates to a method for preventing infection of the genital mucosa of a mammal by virus, pathogenic bacteria or fungi, comprising topically administering, to the genital mucosa of the mammal, an effective prophylactic amount of a formulation comprising a hydrogel which comprises a microbicidal lipid as an active ingredient, a water gelling agent and a solubilizing agent.
