  (EN) Expression of a gene for virulence in a microorganism is repressed by exposing the microorganism to cellobiose or arbutin or combinations thereof. For example, the virulence of pathogenic strains of $i(Listeria) may be repressed in or on food by admixing cellobiose or arbutin or combinations thereof with the food. An assay is provided for a compound which suppresses virulence in food-contaminating bacteria, including $i(Listeria).(FR) On réprime l'expression d'un gène de virulence chez un micro-organisme en exposant ce dernier à la cellobiose ou de l'arbutine ou à leurs combinaisons.
