  An emulsion composition is provided. The emulsion composition comprises a polysaccharide-based Pickering emulsifier comprising an unmodified polysaccharide-based Pickering emulsifier, a modified polysaccharide-based Pickering emulsifier or a combination thereof. The emulsion composition has an improved stability in comparison to an emulsion composition substantially free of the polysaccharide-based Pickering emulsifier. The improved stability includes minimal phase separation. Methods of making the emulsion compositions, polysaccharide-based Pickering emulsifiers, and uses thereof are also provided.
