The novel ascorbic acid derivatives of this invention have excellent characteristics such as long-lasting anti-oxidation effect, high solubility in both water and organic solvents, and high stability in an aqueous solution. Furthermore, the novel ascorbic acid derivatives are useful for feed, food, cosmetic and pharmaceutical products due to their low toxicity and high thermal stability.
