  A debranching enzyme of the pullulanase type derived from the novel Streptomyces strain NCIB 12235. The enzyme exhibits optimum activity at a pH in the range 4 to 6 and at a temperature in the range 55° to 65°C. A method for the production of the enzyme and a process for the saccharification of starch or a starch hydrolysate using the enzyme and glucoamylase or beta amylase are also disclosed.
