  [EN] The present invention relates to compositions and methods for inhibiting nonenzymatic cross-linking (protein aging) which contain 2-alkylidene aminoguanidines and derivatives thereof. Accordingly, a composition is disclosed which comprises an agent capable of inhibiting the formation of advanced glycosylation endproducts of target proteins by reacting with the carbonyl moiety of the early glycosylation product of such target proteins formed by their initial glycosylation. The method comprises contacting the target protein with the composition. Both industrial and therapeutic applications for the invention are envisioned, as food spoilage and animal protein aging can be treated.
  [FR] Compositions et procédés destinés à inhiber la réticulation non enzymatique (vieillissement des protéines), contenant des 2-alkylidène-aminoguanidines et leurs dérivés. Ladite composition comprend un agent capable d'inhiber la formation de produits finaux de glycosylation avancée de protéines cibles en réagissant avec la fraction carbonyle du produit de glycosylation précoce desdites protéines cibles, formé par leur glycosylation initiale. Ledit procédé consiste à mettre en contact la protéine cible avec la composition. On envisage des applications à la fois industrielles et thérapeutiques pour ladite invention, du fait que l'on peut traiter la détérioration des aliments et le vieillissement des protéines animales.
