  [EN] The present invention relates to compositions and methods for inhibiting nonenzymatic cross-linking (protein aging) which contain novel 2-substituted-2-imidazolines. Accordingly, a composition is disclosed which comprises an agent capable of inhibiting the formation of advanced glycosylation endproducts of target proteins by reacting with the carbonyl moiety of the early glycosylation product of such target proteins formed by their initial glycosylation. The method comprises contacting the target protein with the composition. Both industrial and therapeutic applications for the invention are envisioned, as food spoilage and animal protein aging can be treated.
  [FR] La présente invention se rapporte à des procédés et à des compositions contenant de nouvelles 2-imidazolines-2-substituées et servant à inhiber la réticulation non enzymatique (le vieillissement protéique). On décrit ainsi une composition qui comprend un agent capable d'inhiber la formation de produits terminaux issus de la glycosylation avancée de protéines cibles, lorsqu'il réagit avec la fraction carbonyle du produit de glycosylation précoce de telles protéines cibles, formé par la glycosylation initiale de celles-ci. Le procédé consiste à mettre la protéine cible en contact avec la composition. Des applications thérapeutiques aussi bien qu'industrielles sont envisagées pour cette invention, étant donné que la détérioration de produits alimentaires ainsi que le vieillissement protéique chez les animaux peuvent être traités.
