芳香酸可分为两种类型:一种是羧基(—COOH)直接连接在苯环或其它芳环上的碳原子上;另一种则是羧基连接在芳环的侧链上。例如,苯甲酸属于前者,而苯乙酸则属于后者。通常情况下,这类化合物难溶于冷水且多为固体。芳香环上的羧基与脂肪酸中的羧基非常相似,只是酸性略强一些,可以形成酯、酰胺、酸酐或卤化物等衍生物。
